Kale chips are amazing. Just put on a oiled tray with seasoning in the oven until crispy. Eat as is or sprinkle over popcorn.
It's also delicious sauteed with the squash (and some chorizo if you do meat/pork) or with sauteed, then a couple of eggs broken into it and baked in the oven for about 7 minutes.
Kale is my favourite veggie and I apparently volunteer for the Kale Marketing Board on weekends!
last week www.thekitchn.com was ALL ABOUT soups. they definitely have some squash soup recipes. yum!
